Black Bean & Corn Salad

It is almost summer time! I'm so ready for warmer weather and beach days. I'm sharing this black bean and corn salad recipe. It is light, refreshing and super easy to make. It is the perfect side dish or lunch item especially for the upcoming summer season! The part I love about this recipe is that it is easy to mix up omit or add ingredients such as bell peppers, banana peppers, cheese, olives, etc. I've also changed up the dressing before and it still works!

Just a few ingredients with minimal prep work and voila......ready to serve a few or a crowd. The colors are beautiful and it's always a crowd pleaser. Make sure to save this so you can whip this dish up!

  • 1 can Black Beans
  • 2 cups Corn kernels
  • 1/4 cup Tomatoes (diced)
  • 1/4 cup Red onion (diced)
  • 1 Jalapeno (seeded & diced)
  • 1 Avocado (sliced or cubed)
  • 1 tablespoon Olive oil
  • 1 tablespoon Lime juice
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/2 teaspoon Garlic Powder (Or 1-2 cloves fresh garlic minced)
  • 1 teaspoon Cumin
Instructions
    Mix all together and chill before serving to let flavors blend together!
