Instapot Chicken Soup

One pot meals are my go to’s and this one is made quick and easy inside the instapot! Weeknights are busy but I still want to get a home cooked meal on the table so this is a quick and easy instapot meal you’ll want to save for later. There are a few variations you can make to this recipe but use it as a base, as is or for homemade chicken stock if nothing else. The best part is minimal prep, minimal cleanup, set it and forget type recipe and the leftovers can be remade into new meals easily. Read below to see how easy it is to make this instapot chicken soup.

What You'll Need
  • 1 Chicken
  • 4 Celery ribs (chopped)
  • 4 Carrots (chopped)
  • 1 Onion (diced)
  • 1 clove Garlic (minced)
  • 3 cups Water (or up to max fill line inside instapot)
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 Bay leaves
  • 1 tablespoon Italian seasoning
Instructions
  1. What To Do:

    Clean chicken (optional remove skin) and place inside instapot.

    Chop celery, carrots and onion.  Add into instapot.

    Mince garlic and add seasoning into instapot.

    Add in water up to the max fill line.

    Click soup button (change time to 30 minutes). 

    *Make sure release button isn't on vent.
