Broccoli Salad

This refreshing and crunchy salad is the perfect side dish to bring to your upcoming summer get together! Tangy and filling this may be the only side you need. I usually make this in the morning of our get together so it can sit in the fridge and soak in some. It’s always a hit and even my picky husband who is not a fan of salads begrudgingly said it was ok. Adapted from Cassandra Kennedy’s All Recipes Bodacious Broccoli Salad.

Ingredients
  • 3 cups Brocoli florets (blached)
  • 1 cup Bacon crumbles
  • 1/2 cup Cheddar Cheese (shredded)
  • 1 tablespoon Sugar
  • 1/4 cup Onion (diced, Red onion but I've used White onion)
  • 1/8 cup Apple Cider Vinegar
  • 1/3 cup Mayonnaise
  • 1 teaspoon Black Pepper
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Lemon Juice
  • 1/2 teaspoon Garlic Powder
Instructions
  1. What To Do:
    1.  In a medium size pot boil water and add 1 tbsp salt.  Blanch broccoli florets for 1-2 mins.
    2. Remove and drain.  Place broccoli florets in a large bowl.
    3. In a small bowl, whisk together apple cider vinegar, sugar, pepper, salt, mayo, and lemon juice.
    4. In the large bowl of broccoli add in the cheese, bacon and onion.  
    5. Toss in the mayo mixture and mix well.
    6. Refrigerate to chill until ready to serve.
