After the rush of the holidays and with cooler weather forecasted for the foreseeable future it's finally time for soup! I love making soup year round but nothing beats a hot and delicious bowl of soup to warm you up on those chilly nights. This creamy sausage and kale soup inspired by one of my favorite soups from Olive Garden is quick and easy to make. It only takes about 30 minutes to prepare from the prep to serving it to your table making it the perfect weeknight meal to add into your recipe rotation.
Heat stock pot to medium high heat with 1 tbsp olive oil.
Saute garlic and onion.
Add in decased italian sausage and break up into bits.
Stir together and cook until lightly browned.
Add in potatoes and water, chicken broth and ground black pepper.
Bring to a boil and stir until potatoes begin to soften ~ 15 minutes.
Stir in cream and bring back to a boil but do not overcook the potatoes.
Remove from heat and add in kale. Enjoy!
