Quick & Easy Vodka Cream Pasta Sauce

Are you a pasta lover?  My family and I are! I try to limit us to one pasta dish a week and this quick & easy vodka cream pasta sauce is a family favorite!  It is so easy to make that I double it and freeze just so I have some on hand for those busy weeknight dinners.  I’ve used this sauce for spaghetti with meatballs, lasagna, stuffed shells, and more. Read below to find out how to make it!

What You'll Need:
  • 2 cans Crushed or diced tomatoes (28oz)
  • 1 Onion (Diced)
  • 2 cloves Garlic (Minced)
  • 1 tablespoon Italian seasoning
  • 2 Bay leaf
  • 1 cup Chicken broth
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1 tablespoon Olive oil
  • 1/2 cup Vodka
  • 1/2 cup Heavy whipping cream
  1. What To Do:
    1. Dice onion and garlic.
    2. Heat medium pot with olive oil.  Sauté onion and garlic.
    3. Add vodka and cook for 5-7 mins.
    4. Add tomatoes, chicken broth, seasoning and stir occasionally.
    5. Reduce to simmer for 1-2 hours.
    6. Using hand held immersion blender (or pour into a blender) purée sauce until smooth.
    7. Add heavy whipping cream and cook for 5-7 mins stirring occasionally (if vegan, skip this step).
    8. In a medium stock pot cook pasta.
    9. Combine and top with your favorite Parmesan cheese, chopped basil, red pepper flakes, etc.  I hope you enjoy it!
