Valentine’s Day Charcuterie Board

Valentine’s Day Themed Food Board Ideas

I love making food boards because I can change it up to whatever ‘theme’ I want and my family loves to eat them too!  I had so much fun making themed food boards over Christmas that I decided I wanted to try and make them for more holidays this year to celebrate.  The kids also thought they were so special which made these Valentine’s Day themed food boards even more fun to put together!  I also like getting the kids involved in the kitchen so what better way than to let them pick out or help make some of the food items?  They really enjoyed learning how to make some of the sweet treats and ‘writing’ with pancake batter.  Food doesn’t last long around this house so once it was all put together they gobbled it all up.

I am going to break down what I used, made and where I bought some of the items.  The other thing I love about these food boards is you can make them however you want aka you can make it as complicated or easy as time allows.  There is no wrong way to do it and it all gets eaten!

Rice Krispy Treat X O XO

Rice Krispy treats are a family favorite and a easy to make homemade treat!  My kids love to make these and I just took it one step further to cut out the X O X O using this template.

What I did:

Follow the directions on the back of the box and set up the rice krispy treats in a 9×13 greased baking dish.

Print out the X O X O template and cut out the letters.

Place the letters on your rice krispy sheet to use as a stencil.

Cut around the letters.

Carefully remove the letters from your baking dish.

Sprinkle on some festive colored sprinkles if you’d like.  I used red sprinkles on the X’s.

Then lay out on your board.

Meringues

Meringues are actually easy to make!  You will need a few tools to make it easier but you can also just make them with what you have in your kitchen.

What you’ll need:

6 eggs, separate the egg whites

1 tsp lemon juice

1 1/2 c sugar

1 tsp vanilla extract

Tools You’ll Need:

Mixer

Piping bag with coupler tips or gallon sized zip loc bag

Baking sheet

Directions:

Separate your egg whites and yolks into two bowls. You will only need the egg whites.

Whip the egg whites until frothy, then slowly add in your lemon juice, vanilla extract, and sugar.

Whip until smooth and sugar has dissolved.  You can check by rubbing a small amount between your fingers to feel for the sugar granules.

If you are making different colors then you will need separate bags.  Set up your piping bag with your desired tip or clip the end of your gallon sized zip loc bag and attach the tip.  Scoop out the desired amount you would like to color.  Drop in some food coloring and mix in well.

Scoop batter into the bag then secure the end of your piping bag or zip loc.

For the hearts draw the outline and then fill.  If you have a large enough coupler set than you could make the heart with just two passes.

For the circles steadily squeeze out and bring up to a point.

Chocolate Covered Strawberries

Chocolate covered strawberries.  These are another fun and easy dessert that we like to make.  Strawberries are not in season here on the east coast but they looked good so I picked up a box.

I used Bakers baking chocolate in both semi sweet and white chocolate bars.  Break down the chocolate bars into smaller pieces and place into microwave safe bowl.  Microwave for 1 min then add 30 seconds at time stirring in between until melted and smooth.

Dip and swirl around the strawberry with chocolate!  Let harden on a silpat mat or piece of parchment paper or Saran wrap.

Chocolate covered pretzels are always a hit at my house!  Any pretzel will do but I like these pretzel rods best.  Since I had leftover melted chocolate from the chocolate covered strawberries I made a few of these to add to the Valentine’s Day charcuterie board.

Simply dip and coat pretzels the same way you made the strawberries and if you want to decorate with sprinkles do so before laying them down on your silpat mat or parchment paper to harden.

Recipe for Pancakes:

2.5 c flour

2 tbsp sugar

2 tsp baking powder

1 tsp baking soda

1 tsp salt

3 c milk

3 tbsp lemon juice

2 eggs

2 tbsp butter, melted

Now you’ve got all the recipes for the homemade items that I included in these Valentine’s Day themed food boards.  For the sweet treat board I picked up Strawberry and Chocolate Pocky sticks from a local Asian food store, Trader Joes heart shaped jelly candies and Chocolate & Vanilla Macaroons.  The Brunch board I used chicken sausages and bacon from Costco.  I originally planned to have strawberries on the brunch board but my kids ate them all before I could put them on the board!  Hope this gives you ideas on your next food board creation!
