If you love the cozy, melty goodness of a traditional Raclette dinner but don’t want to set up the whole tabletop grill, this easy Raclette casserole gives you all that delicious flavor with hardly any fuss. It’s perfect for a quick weeknight meal or a cozy winter evening when you’re craving something warm and cheesy.
Raclette is a semi soft cows milk cheese from the alpine regions of Switzerland and France. It has a deep, fruity flavor and a pungent aroma that is milder when melted. Raclette comes from the French word “racler” which means “to scrape” and is traditionally melted by fire and scraped over boiled potatoes, pickles and cured meats. Raclette cheese is similar to Gruyere, Fontina and Emmental in its nutty, creamy, sweet flavors and melting properties which makes it perfect for this quick and easy casserole.
What You’ll Need
- Casserole dish
- Potatoes – any kind you love (Yukon Golds, red, russet, baby potatoes, or even sweet potatoes)
- Ham (optional)
- Raclette cheese – I love the seasonal Raclette from Trader Joe’s
- Optional sides: a mix of dried cured meats, pickles, and extra roasted root vegetables
How to Make It
- Prep the potatoes: Wash, cut, and season your potatoes with salt, pepper, and a drizzle of olive oil.
- Layer it up: Place the potatoes in an oiled casserole dish. Add cubed ham on top if you’re using it.
- Bake: Cook at 400°F (200°C) for about 30 minutes, or until the potatoes are soft and golden.
- Cheese time: Layer slices of Raclette cheese on top of the cooked potatoes —use as much or as little as you like!
- Melt and serve: Return to the oven for another 5 minutes, just until the cheese melts into a glorious, gooey topping.
To Serve
Spoon it out hot and serve alongside cured meats, pickles, veggies, or a crisp green salad. It’s everything you love about a classic Raclette dinner—melty cheese, hearty potatoes, and rich flavors—without the special equipment.
Simple. Comforting. Totally irresistible. Enjoy!
