Gingerbread Cookie Cut Outs

Kicking off the holiday baking season by sharing one of my favorite Christmas cookie recipes…..Gingerbread Cookie Cut Outs!  The Christmas season just wouldn’t be complete without Gingerbread cookies!  I prefer soft and chewy over crisp and hard for my Gingerbread cookies and these just hit the spot.

I bake all year round but there is just something special about baking during the holiday season.  We love these Gingerbread cookies so much we make a few batches of these throughout the month of December. 

My kids love to decorate cookies but these Gingerbread cookies are good alone too!  They also store well so whip up a batch and store them in an air tight container where they will keep for a week or possibly two but in my house they do not last that long!

 

Ingredients:

3 c all purpose flour

3/4 c brown sugar

1 tbsp cinnamon

1 tbsp ground ginger

1/2 tsp ground cloves

1/2 tsp salt

3/4 tsp baking soda

12 tbsp butter, softened, unsalted (I have used slated before just adjust by using slightly less salt)

3/4 c unsulphured molasses

2 tbsp milk (I used 2%)

1 tsp vanilla

What To Do:

Set out butter and gather supplies and ingredients needed.

In your stand mixer or mixing bowl add the first 7 ingredients on low.  Mix well.

Add in chunks of butter and mix well until the dough resembles wet sand.

Slowly add in molasses and the vanilla.  Mix well on low.

Add in milk and increase mixing speed to medium until everything is mixed completely.

Cover bowl and place in fridge for 15 minutes.  This will make the dough less sticky and easier to roll out and cut.

 

Preheat oven to  350f.

Flour your counter or working surface and roll out dough to about 1/4″ or 1/2″ thickness depending on your preference.

Cut out your gingerbread cookies!

 

Place on silpat mat or parchment paper arranging them about 1″ apart.

Bake for 10 minutes or until the middle is set.  Do not over bake!

Decorate!

Half the fun is to decorate these cookies.  There are so many options out there but a quick and easy one is to use these bakers chocolates and sprinkles!  No need to whip up icing or wait for it to set!
