Peanut Butter and Jelly Bunnies

 

It’s Good Friday and almost Easter so we are continuing with all things bunnies.  From the darkness He rises to save us all.  It’s day 2 of spring break for my kids so I had some little bunnies that were very excited to be baking in the kitchen with me!  These peanut butter and jelly bunnies turned out really cute and were easy to make.  This simple and fun baking recipe was perfect for my littles (except for my child with food allergies).  I need to try and come up with a recipe that will work for him.  Read below to see how I made these peanut butter and jelly bunnies and pb&j cookie sandwiches!

Peanut Butter and Jelly Bunnies

 

What You’ll Need:

  • Pillsbury Crescent Rolls – 2
  • 1/3 c peanut butter
  • 1/4 c jam
  • Rolling pin
  • Baking sheet
  • Knife
  • Microwave safe bowl
  • Spatula

What To Do:


Step 1 

Open 1 package of Pillsbury crescent rolls for the body and set aside the 2nd package to use later for the ears. 

Roll out the dough so the perforated lines disappear.​

Step 2

Warm up to soften your peanut butter and spread it evenly onto the dough. 

Layer on the jam. 

Roll up lengthwise and cut into 2″ wide circles, makes about 12.  Place onto cookie sheet.

Step 3 

Open the 2nd package of crescent rolls.  Cut 2″ wide piece and unravel.  Split in half then shape into a heart shape. 

Place onto cookie sheet next to the pb&j roll to make a bunny shape!

Step 4 

 Bake at 375f for 15-20 mins or until golden.  Let cool then enjoy!

 

Peanut Butter Cookies – PB&J Cookie Sandwiches!

Another fun recipe we made were these peanut butter cookies and turned them into PBJ cookie sandwiches!  Soft and chewy these peanut butter cookies are delicious on their own.  I just felt like dressing them up for national peanut butter and jelly day.

 

What You’ll Need:

1 1/2 c flour

1/2 c brown sugar

1/2 c white sugar

1 tsp vanilla

1 tsp baking soda

1/2 c creamy peanut butter

1 egg

Mix together butter, sugars and peanut butter until creamy.  Then add in vanilla & egg.

Measure out your dry ingredients – flour & baking soda and mix together. 

Add into your buttery mixture to finish the dough.

On a floured surface roll out your peanut butter cookie dough OR scoop and smash onto a cookie sheet.

Preheat oven to 350f.  

Bake for 12 mins or until done.  Your finger shouldn’t leave an impression but these are meant to be soft cookies.  If you like crisp cookies bake for 15 mins.

Let cool for 5-10 mins. 

We put a thin layer or peanut butter and jelly to make cookie sandwiches but they are delicious on their own too!  Store in an airtight container for the week.
