Celebrating Cinco de Mayo with these green chile chicken quesadillas! To make this a quick and easy recipe I used Costco’s rotisserie chicken breasts. Priced at $4.99 their rotisserie chicken is easily one of their best deals. I can easily make 2 sometimes 3 meals out of it for my family of 8. All you need to do is dice it up since it is already cooked. Their canned chicken is also a great back up option for this and other recipes calling for chicken. The best part is if you are vegetarian just leave out the chicken and sub in a vegetarian options such as black beans, chick peas, bell peppers, mushrooms, etc.
